Dororo

A child thief encounters a ronin lacking arms, legs, eyes, ears, nose, and mouth. The ronin was born without these body parts due to his father's deal with twelve demons, which cost the ronin his physical form in exchange for power. Left to die as an infant, the ronin was saved and raised by a doctor who gave him prosthetics and trained him in swordsmanship. Each time he defeats a demon, a missing body part returns. He travels through a land ravaged by conflict, hunting down demons.
