Yamaoka and Kurita meet Inspector Nakamatsu while observing a dispute between Tooru Kiyama and Hōji Kinno. Kinno hired Kiyama, a brew master, in Niigata to improve his brewery’s poor reputation, but Kiyama left for Tokyo after becoming angry. The conflict arises because Kinno drank tap water and used plastic containers on the train, which Kiyama viewed as a lack of water quality awareness essential for sake brewing. Yamaoka invites Kinno’s older brother, who manages the brewing, to perform a water taste test. After the brother correctly identifies the water source used in a high-quality sake, Kiyama is convinced of their expertise and agrees to work for the company.
