He confides in his brother, who runs the Okaboshi restaurant, and Yamaoka offers assistance. Yamaoka identifies the error and recommends a trip to Shinjiko in Shimane. A local fisherman guides them on the lake to harvest freshwater clams, demonstrating how the substrate affects flavor. Ryouzou understands the distinction and secretly prepares a dish using clams from the sandy bottom for Kaibara. He successfully passes the evaluation and is officially appointed as wankata.
