Chairman Kurushima tasks Kamishima with persuading the picky chef Yamanouchi to lead Hotel Cardinal's restaurant after the current chef departs. During dinner, Kamishima brings Yamanouchi to Edenhall, where Ryu conducts a blind taste test using aged Japanese mirin that resembles European sherry, challenging Yamanouchi's assumptions. Later, while Miwa and Yukari remain at Edenhall, trainee bartender Kawakami Kyouko arrives in despair after her supervisor claims her Martini "had no face." Ryu clarifies that while every Martini is unique, the distinct character and fragrance of the gin must remain evident in the final drink.
