90
Yamaoka recruits gyoza experts Okutsu and Fang to prepare boiled dumplings featuring flavorful wrappers without garlic. Fang enhances his dish with a black vinegar and sugar sauce. During the competition, Kaibara critiques traditional fried gyoza and presents steamed varieties with translucent rice flour skins, including leek, shrimp, and fish fillings. Yamaoka counters with boiled gyoza using wheat flour skins and meat and vegetable fillings. After initial praise, Yamaoka introduces a sweet brown sugar gyoza to balance the heavier flavors, resulting in a tie. Kaibara leaves in dissatisfaction, while Chikada and Yamawaki commit to improving their menus through further study.
