The Culture Department visits the affordable Ginyotei European restaurant for breaded oysters, only to find chef Nakazato depressed. He feels unable to compete with Hiroy Murono, the renowned owner of Restaurant Che Murono, who also hails from Sendai. Yamaoka visits Che Murono to sample the French-inspired cuisine, ordering raw oysters and bringing his own nihonshu instead of the house wine. When Murono objects, Yamaoka insists they dine together to test his palate. He demonstrates that nihonshu pairs better with raw oysters than French wines, which contain organic acid and salt that clash with the seafood. Impressed by the flavor combination after tasting Ginyotei’s breaded oysters, Murono helps restore Nakazato’s confidence.
